Blanch the mushrooms in hot water for 2-3 minutes, then rinse them in cold water and you can easily peel them off.

Ingredients: One piece of pork belly, 6 mushrooms, two handfuls of green onions, a few garlic, appropriate amount of soy sauce, a few rock sugar, ginger slices
Method:
1. Cut the pork belly into thick strips and cut the mushrooms into cubes. Scallions: Cut off the green onions and pat them, leaving a few sections of green onions and the rest tied into knots. Slice the ginger and peel the garlic and pat lightly.
2. Add a little oil and sauté the onion, ginger and garlic, then add the pork belly and stir-fry until slightly brown. Add soy sauce and rock sugar and stir-fry to coat with sugar color. Add boiling water to cover more than half of it and bring to a slow boil over medium-low heat.
3. Simmer the mushrooms together. The mushrooms are starchy and not easy to cook for too long. The color has thickened. When the mushrooms and meat are ready, add the green onions and reduce the juice over high heat. Serve on a plate.
