Method
Wash the clams with clean water, soak them in salt water and spit out sand. Cut the potatoes into small cubes and put them into the electric pot. Add 1 cup of water to the outer pot, steam the potatoes and let them simmer for half an hour when the electric pot switch is turned on. Then take them out.
Put the clams into 800ml of boiling water and cook until the shells open and then turn off the heat. Remove the clam meat and set aside, and save the clam soup for making soup later.
While the clams are cooking, cut the onion into small dices; remove the hard bottom part of the mushrooms and cut them into thin slices; cut the bacon into small dices.
Put an appropriate amount of butter (15-20 grams) into a wok, turn on low heat, and after the butter melts, add onions and stir-fry until translucent and changes color. Then add the mushroom slices and stir-fry.
Then place the bacon in the center of the pot (pull other ingredients to the side first), fry the bacon until the aroma is released, then mix with the mushrooms and onions pushed to the side and stir-fry. Then remove the pot and set aside.
After the wok is clean and dry, place 30 grams of butter in the pan. After melting over low heat, add 45 grams of flour and stir-fry until it looks like the picture above.
Then add 800ml clam soup and 250ml cooking water, heat and bring to a boil. Use a spatula and a spoon to break up the flour agglomerates by "pressing" and "stirring" before boiling. (Remember to stir constantly to prevent sticking or clumping)
After boiling, sift into the soup pot.
Then add the steamed diced potatoes and stir-fry ingredients, bring to a boil, then cook over low heat for another 1 minute. Remember to stir constantly while cooking to prevent sticking or agglomeration.
Then add clam meat and fresh milk (the key to a beautiful soup color) and stir.
Finally, add an appropriate amount of salt to taste, and a little soup with pepper (black or white pepper), stir it, then turn off the heat and enjoy.
It is delicious and can be garnished with some coriander leaves!
