Because of its superior living environment, beautiful water and abundant food, almost every crab in Yangcheng Lake has a big and fat body, a bright green shell, a clean abdomen, golden claws and yellow short and dense hair. Common species of hairy crabs have heavy soil content and heavy shell mud due to living environment. The crab belly that rubs the ground all the year round is also hidden in the mud. The hair is thick and muddy, and the claw color is not obvious golden yellow.
It is best not to eat crabs for more than four hours. Crabs are different from other foods. Once they leave the water, the bacteria that began to multiply are in the body and become food containing histidine. The histidine contained in crabs will be decomposed into histidine under the action of some vitamins overnight. Although high temperature can kill pathogenic microorganisms, it cannot destroy toxins and cause histidine poisoning. So it's best to steam crabs now, generally not more than 4 hours.
