During the summer vacation, my mother taught me to be a family helper and taught me how to cook some simple dishes. One of my favorite dishes is spicy and sour potato shreds. Here’s how to stir-fry hot and sour potato shreds: Step 1: Wash the potatoes and peel them! Peeling potatoes is difficult because there are many pits on the skin. It is quite difficult for me to peel the potatoes cleanly. Step 2: Start cutting potatoes! Cut the potatoes into slices first, then shred them. Since I have never cut vegetables, it was really difficult to cut the potatoes into shreds. The shredded potatoes were finally cut, and I put them into the basket. I remember hearing my mother say before that if you want shredded potatoes to be fried without sticking to the pan, you must first put the shredded potatoes into running water, rinse off the starch on them, and then dry them. Step 3: Start cooking! I start by pouring some oil into the pan. Maybe I didn't wipe off the water in the pot, and the oil crackled and exploded in the pot. I was so scared that I quickly covered the pot. Then, I poured the prepared shredded potatoes into the pot, stir-fried a few times, then added chili peppers, and finally added salt, vinegar, MSG, and green onions. Stir-fried several times to avoid burning. The hot and sour shredded potatoes were ready. I happily brought this dish to the table. Everyone in the family tasted it. They all praised me for frying it well. I also tasted it myself and realized that it was a little salty. Through this cooking, I deeply realized the hard work and sultry heat of my mother's cooking, and the oil would splash out and I would get burned accidentally.
