Jiaozi is a famous local food in Shenyang, with a long history of nearly 180 years. In the eighth year of Daoguang reign in Qing Dynasty (1828), a man named Bian Fu came to Shenyang to make a living in Bianjiazhuang, Renqiu County, Hejian District, Hebei Province, and built a riding house on Xiaojinqiao, named "Bianjia Dumpling House". Although the facade is simple, it is well-made and has a unique flavor. It is famous for its dumplings and is deeply loved by people. Jiaozi, a border family, was called "jiaozi with fried stuffing" because the meat was fried. However, because the owner's surname is Bian, people are used to calling it "Jiao Zi, Lao Bian Jia". Jiaozi, Lao Fang, has opened three semicolons in Shenyang, which are run by the descendants of Bian Yue, Bian Yi and Bian Lin. Due to the continuous development of business and the continuous improvement of enterprises, Laobian jiaozi has developed into a professional dumpling restaurant with perfect equipment and fine division of labor. The reason why Laobian jiaozi enjoys a long-standing reputation is mainly because of its exquisite selection of materials, fine production, unique shape and fresh and mellow taste. Jiaozi, an ancient frontier, has the most unique features of mixing stuffing and making skins. When mixing stuffing, stir-fry the meat stuffing first, and then simmer it with chicken soup or bone soup, so that the soup is immersed in the stuffing to make it swell, moisten and add flavor. At the same time, according to the seasonal changes and people's tastes, seasonal vegetables are added to make vegetable stuffing. The harmony of the skin of Laobian Jiaozi is also unique. Mainly mixing refined powder with proper amount of cooked lard, and then blending with boiling water. So that the skin can be soft, smooth and transparent. In addition to stir-frying, jiaozi can also bake and stir-fry.

Because old jiaozi is thin and full, soft and fleshy, and the stuffing is delicious, rich and not greasy, so guests from far and near are willing to taste it. 1964, when Comrade Deng Xiaoping visited Shenyang, he said happily: "Jiaozi, an old frontier, has its own uniqueness and should be maintained." 198 1 in the summer, the famous crosstalk artist Hou Zeng wrote eight words at the dinner party where he personally tasted old jiaozi: "jiaozi is the best in the world."
