Kumquat soak in lightly salted water for 30 mins, wash
Put it into the boiling water and cook for 1-2 mins.
Cut the kumquats in half, remove the seeds
Then cut in four, or cut into the size you like
Cut the lemon, and with a knife, make a few cuts in the pulp, stir the pulp and squeeze out the juice.
(No lemon at home, or don't like kumquat honey with a little sour taste can ignore this step)
{Cut kumquat + rock sugar + water + lemon juice } together in a pot, medium heat to boil, turn to low heat, simmering for 30 minutes, stirring diligently, to prevent sticking to the pot.
Tips: Don't feel the water is too little, the kumquat itself will still have a little juice, and finally need to present the "honey" state, not sugar water
Cook until the kumquat skin is soft and sticky, the juice is thick, turn off the fire.
Allow to cool to 30-40 degrees, add honey and stir well.
(The amount of honey is actually not fixed, you can add or subtract according to personal taste)
Packed into pre-washed glass bottles, sealed and stored.
