Ingredients: rape, onion, ginger and garlic, salt, oyster sauce, water starch and oil.
Practice steps:
Step 1: First, we break off the rape leaves, clean them, and then open the rape leaves and leaves. Boil a proper amount of water in the pot, add a spoonful of salt and a few drops of cooking oil to the water. After the water boils, we first blanch the rape for 20 seconds, then blanch the rape leaves together until the leaves become soft, and then take them out. Then quickly put them in cold water for supercooling, and after thorough cooling, take the rape out and control the moisture for later use.
Step 2: Heat the oil in a pan, add onion, ginger and garlic until fragrant, then add the blanched rape, stir-fry quickly and evenly over high fire, because the rape has been blanched, so it doesn't need to be fried for too long, otherwise the color will turn yellow and the taste will be bad if it is fried for too long. Just add salt and oyster sauce to taste, then pour in a little water starch to thicken it, and turn over the fire.
