Dried bamboo shoots have the effect of clearing away heat and resolving phlegm, benefiting the qi and stomach, curing thirst, facilitating watercourses, diaphragmatic and refreshing the stomach. That said, these dried bamboo shoots are a specialty of my sister-in-law's place, or their own sun-dried, so I feel more comfortable eating them, and that piece of pancetta in the fridge has a supporting role.
Materials
Main ingredient: 50g dried bamboo shoots, 150g pancetta;

Tips
The dried bamboo shoots should be softened with water and then washed with water for 3-4 times, each time you need to dry the water with your hands and then wash again, repeat 3-4 times.
