Prepare a large squid, leaving only the body, and soak it in a water basin.

Add some salt and white vinegar to the soaking water, and the soaking time should be more than 8 hours, preferably overnight.

Soak until soft and then tear off the outer layer of skin and bones from the squid.

Use an oblique knife at 45° to cut the cross-cut flowers, and then cut them into 2*5cm pieces.

Slice the ginger, cut the onion into sections, and smash the garlic.

Put the cut squid into boiling water and blanch it, remove and drain the water and set aside.

Heat the pot, add an appropriate amount of oil, and sauté the ginger, onion, and garlic until fragrant. Add squid and stir-fry, add seasoning and cooking wine.
