4 eggs, 600cc milk, 60g brown sugar
Practice
Heat the milk and 30g brown sugar until the sugar dissolves (the amount of sugar can be added depending on your favorite sweetness)
Take a separate pot and whisk in the four eggs and strain through a sieve!
When the milk-sugar mixture from step 1 has cooled down, pour it into the egg mixture from step 2 to make the pudding mixture! Strain through a sieve a few more times to keep the pudding mixture free of air bubbles, and the steamed pudding will be more delicate!
Heat another 30g of brown sugar with a little bit of water in the microwave for 1~2 minutes to make a concentrated sugar solution and pour it into the bottom of the pudding container!
Pour the pudding liquid from step 3 into the container with the concentrated sugar liquid, and then steam the egg pudding for about 15 minutes over medium-low heat.
