Ingredients
Broccoli, potatoes, onions, garlic, pepper noodles, salt, soy sauce, chicken essence
Method
1. Break the broccoli into small florets. After the water is boiled, add the broken broccoli and blanch it briefly. When it changes color, remove and drain the water and set aside.
2. Cut the potatoes into long strips as thick as your fingers and set aside.
3. Pour more oil into the pot. When the oil is 80% hot, add potato strips and fry until golden brown. Add chopped green onion and minced garlic and stir-fry until fragrant. Add salt and peppercorns and stir-fry evenly. Add a little soy sauce to the pan.
4. Pour in the blanched broccoli, stir-fry evenly, turn off the heat and add chicken essence and it’s ready!
Tips
1. When blanching broccoli, you can add a little salt and salad oil to the water to make the broccoli appear greener.
2. Never add water to the cut potato strips, otherwise the oil will smear when fried in the pan and cause burns easily.
3. The broccoli has already been blanched, so don’t fry it for too long, otherwise it will become rotten and taste bad
