1. cold skin broken with warm water soaked for about 8 minutes.
2. Drain and slice.
3. Heat oil in a wok and scramble the eggs.
4. Stir fry some of the scallions in the remaining oil.
5. Put the cold skin to fry.
6. Add a little soy sauce, salt to taste, sprinkle with the remaining chopped green onion, cilantro and stir-fry well.
