Boiling sugar is the central link in making candied dates. Firstly, 40 kilograms of 55% ~ 60% concentrated sugar solution is prepared in a copper pot or stainless steel sandwich pot, and after heating to dissolve the sugar, 60 ~ 80 grams of small amount of concentrated hydrochloric acid or citric acid is added. Pour 60kg of processed fresh dates into the pot and cook for more than ten minutes. At this time, the pulp becomes soft, and 50% sugar solution of 10kg is added three times, and boiled for 3 ~ 5min minutes each time.

Then add 1 kg of 50% concentrated sugar solution and 2 ~ 3 kg of granulated sugar each time, and boil it repeatedly for 3 times. Finally, add 20 ~ 25 kilograms of sugar in three times and boil. Add sugar for the third time and cook for 20 minutes. The whole sugar boiling process takes about 1.5 ~ 2 hours, and the concentration of sugar solution in the pot can reach about 70%. Adding sugar in stages and repeated boiling are beneficial to jujube fruit to absorb sugar in sugar solution. After that, the jujube fruit in syrup is poured into a jar and soaked for 24-48 hours.

Take the jujube fruit out of the sugar solution with a colander, drain the sugar solution, spread it on a bamboo drawer, bake it in a drying room at 60 ~ 70℃ until the jujube skin is dry and not sticky, and take it out and shape it when the pulp remains soft. Pinch the jujube fruit into a flat rectangle one by one, remove impurities at the same time, classify it according to size, spread it on a bamboo drawer, continue baking for several hours, and take it out when the water content of the candied jujube is about 20%, which is the finished product.
