Method:
1. Prepare materials.

Octopus: Medium size is best. The baby ones are not suitable for stewing, and the big ones don’t look good when sliced. Ask the seafood stall owner to kill it and cook it directly at home.

2. Blanch the beef in hot water, drain and let cool.
3. Peel and cut red and white radish into pieces, and cut garlic sprouts into sections.
4. Take a large deep bowl, peel the pear and grind into puree to prepare the sauce. Add other seasonings and mix in the bowl. It is recommended to use pear juice (filtered through a juice machine). The stewed sauce will be clearer than using puree.
5. Put the Sichuan blanched beef, red and white radish, garlic sprouts, and red dates into the sauce, mix thoroughly (you can put it directly into a deep pot), and marinate for 2 hours to allow the beef to absorb the natural The vegetables are fragrant and sweet. Do not add pine nuts at this stage.
6. Sprinkle flour on the octopus and rub it, then use a brush to clean the dirt from the suction cup. Be sure to brush the whole body clean.
7. Cut the claws into sections and cut the body in half.
8. Put the marinated beef short ribs, vegetables and sauce into a cast iron pot without adding water. After boiling over high heat, turn to low heat and simmer covered for 1 hour.
9. The white radish is completely cooked.
10. Add octopus, stew for ten minutes, add pine nuts, and serve.
