Exercise:
1. Wash the chicken neck to remove blood vessels and fatty oil.
2. Cook in cold water until it is medium-cooked.
3. Then take out the dry water, cool it and cut it into small pieces.
Put a little more oil in the pot than usual. When the oil is hot, add onion, ginger, garlic, aniseed, cinnamon, fragrant leaves, dried peppers and sesame peppers and stir-fry until fragrant.
5. Don't turn off the torch after the incense explodes. Take them all out. Don't leave the oil in the pot! Then add half a bag of batter and a spoonful of fried sauce.
6. Add the chicken neck and mix well.
7. Pour the water from the chicken neck into the pot, then add salt, sugar and monosodium glutamate, cover the pot and simmer for 20 minutes.
8. Open the lid and turn to the fire. Stir fry until the juice is collected.
Tips:
Don't pour out the water that has boiled the chicken neck. This is a good stock.
Stir-fry the juice over the fire. You can choose the remaining amount of juice according to your personal preference.
