Wuyuan belongs to ancient Huizhou. The food here actually belongs to Huizhou School, but it has its own characteristics. We traveled all the way from Shexian County and yi county in Anhui Province to Wuyuan in Jiangxi Province, and fully felt the characteristics of "heavy oil and heavy color" of Anhui cuisine.
Because we have tasted all the special foods we should eat along the way, such as stinky mandarin fish, yipin pot, hairy tofu and so on. The first thing we did when we arrived in Wuyuan was to ask the innkeeper what different specialties Wuyuan had. The boss thought about it and told us: Steamed vegetables.
After getting the answer, we hurried to find something delicious. Finally, I learned that the steamed dish mentioned by the boss is not a specific dish, but a special way of making food. In Wuyuan, both meat and vegetarian dishes can be steamed. Wuyuan has a saying that "there is no meat, no steaming, no vegetarian food and no paste". Steamed rice noodles have been a major feature of Wuyuan since ancient times.
Steamed vegetables, also called steamed rice noodles. This cooking skill is said to date back to the Eastern Han Dynasty. People grind grain into powder and steam it with vegetables or meat. This practice originated in Wuyuan Mountain, where there is little land and there is not enough food to eat every year. During a few days in Wuyuan, we tasted the special steamed ribs and dandelion, among which the steamed meat was particularly delicious. We brushed this dish twice. My friend and I, two northerners, all said that Wuyuan's food was too palatable.
It is said that Wuyuan people can make any vegetarian dishes into steamed dishes. Steamed pork, steamed fish, steamed large intestine, steamed chicken wings, steamed tofu, steamed beans, steamed eggplant ... The ingredients are wrapped in up-regulated spices and rice noodles, showing a completely different taste.
More interestingly, we ordered steamed wild vegetables from Wuyuan and a nest of rice, which was decisively rejected by the boss. I was still confused at the time. I didn't know there was a thick layer of rice under the steaming bucket until I served the food. Even today, steamed vegetables are still full of food.
The steamed vegetables in Wuyuan are delicious, and the rice paste food is more utilized and absorbed. Because the ingredients are wrapped in rice paste, the original flavor of the food is largely preserved. Compared with frying, frying and frying, it also has the characteristics of less oil and less salt, so it is considered to be a relatively healthy food.
