1. Cut cowpea into 5cm-long segments and wash with clear water.
2. Pour clean water into the pot. After the water is heated, pour the cowpea into the pot, add about 3g of salt and a few drops of cooking oil, blanch 1 min.
3. Take out the scalded cowpea and put it in cold water.
4. Pour chopped pepper, soy sauce, vinegar, a little salt and sesame oil into a bowl and mix well.
5. Put the cowpea into the dish and pour in the prepared sauce.
