1.Clean the pigskin bought in the vegetable market.
2. After cleaning, put it in a clear water pot, boil it over high fire and cook it over low heat until the pigskin becomes thick and discolored. Take out the cooked pigskin, cool it and scrape off the oil in the inner layer of the pigskin with a knife.
3. Boil the water for a few minutes.
4. Cut the pigskin with clean oil into palm-wide strips with a knife, thread it and hang it in a ventilated and cool place to dry.
5. Generally, the pigskin can be dried after drying for about 7 days.
6. Dry pigskin to the point where it can be broken by hand.
7. Pour vegetable oil into the pot, add dried pigskin when the oil is 70% hot, and fry the pigskin with low fire to make it fluffy and yellow.
8. Take out the fried pigskin and control the net oil for later use.
9. After the fried pigskin is boiled in a boiling water pot and soaked for about 6 hours, the pigskin becomes soft, swollen and elastic.
10. The soaked fried pigskin can be used for cold dishes, soup, or cooking with other vegetables.
11.The fried pigskin after soaking will feel fragrant but not greasy, empty, smooth and full of elasticity.
