Homemade method of eggplant mashed potatoes
Common practice of eggplant mashed potatoes: peel and wash potatoes, then cut them into small pieces, then find a piece of lean pork, cut the meat into filaments, put oil in the pot, stir-fry the meat, add chopped green onion, add eggplant and potatoes, add appropriate amount of water, stew eggplant and potatoes for 15 minutes, then mash them with a spoon and sprinkle with some coriander.
