Maixiang chicken practice:
Chop chicken pieces into reasonable sizes, mix them evenly with a small amount of purified water, black pepper, salt, sugar, chicken essence, turmeric, cinnamon, laurel, coriander, thyme, rosemary and sage (the difference between the above materials is not more than 2, and the specific weight is unknown), and marinate them at about 4 degrees 12 hours or more.
Mix flour, egg yolk powder, baking soda and corn flour evenly, add chicken pieces, rub the chicken pieces by hand and mix well with flour.

Oil temperature 179℃, chicken nuggets fried at 6 standard atmospheric pressure (in pressure cooker).
