Red kidney bean belongs to the genus Phaseolus. According to the color of kidney bean seed coat, it can be divided into red kidney bean, white kidney bean and flower kidney bean. Shanxi Province is the main producing province of red kidney beans in China, and Kelan, Wuzhai, Jingle, Daixian and Fan Shi in Shanxi Province are the main producing areas of red kidney beans. Kelan County is the national export base of red kidney beans.
Red kidney beans are rich in anthocyanins and saponins, which can reduce the content of local inflammatory tissues in joints, have obvious anti-inflammatory effect, and have anti-inflammatory and analgesic effects on arthritis patients.
