1, pure milk
After talking about fresh milk, let's take a look at pure milk. Most of the pure milk in the supermarket is sold in the normal temperature area, and we can also judge its attributes by the information marked on the milk packaging.
We can know that pure milk belongs to full-fat sterilized milk, which is processed by ultra-high temperature instantaneous sterilization method. The sterilization temperature is high, and the bacteria in milk are completely eliminated, so the requirements for storage environment are not high, and it can be stored at room temperature, and the shelf life is usually not less than 6 months.
If we compare pure milk with fresh milk, the most essential difference between them lies in the different sterilization methods, and because of this, their storage conditions and shelf life are also different. In addition, from the taste point of view, the sterilization temperature of pure milk is high, and some heat-labile ingredients in milk will also be lost at the same time, so the milk taste is relatively not as strong as fresh milk, and the taste is slightly inferior.
2, low-fat milk
Milk is rich in milk fat. When we drink milk, we can feel a mellow and rich taste, which is partly due to the fat contained in milk.
The fat content in ordinary milk (whole milk) is about 3%. On the basis of whole milk, low-fat milk separates some fat from milk by centrifugation, and its fat content is about half of that of whole milk, which is about 1%~ 1.5%.
Although, by definition, low-fat milk contains less fat and is less likely to get fat when drunk, low-fat milk is not as perfect as expected:
First, in the process of separating milk fat, low-fat milk will inevitably lose some fat-soluble vitamins.
Second, low-fat milk tastes less full than whole milk, and it is more likely to drink too much.
Thirdly, because the fat content in milk is less, low-fat milk tastes not as good as full-fat milk, so some merchants will add some additives to low-fat milk to improve the taste of milk. A brand of low-fat milk, in addition to raw milk, there are many food additives and food flavors in the ingredient list.
Therefore, on the whole, if there is no special need to reduce fat, there is no need to deliberately choose low-fat milk. As long as the intake is controlled, the extra fat of whole milk will not play a big role in weight gain.
