1. Wash and drain pork belly with skin, put it in the refrigerator for half an hour in advance until it becomes hard, take it out and cut it into thin slices. Cut the green pepper into small pieces and slice the garlic.
2. Heat the pan, put the oil, add the garlic slices, and stir-fry the fragrance.
3. Add pork belly slices and stir fry.
4. Stir-fry until the flowerless meat slices force out the oil and the surface is yellowish.
5. Add a tablespoon of bean paste and some cooking wine.
6. Stir-fry until the meat slices are evenly covered with bean paste, and pour in the green pepper and stir-fry for a while.
7. Add a little salt.
8. Add some sugar to refresh yourself.
9. Add a small amount of chicken essence.
10. Stir well and serve.

1. Pork belly is frozen hard in the refrigerator in advance, and it is easier to cut into thin slices. Pork belly will be fragrant only if it is fried thoroughly in the oil pan. The bean paste I use here is not very spicy, and the spicy taste in the dish basically comes from pepper. If you can eat spicy food, you can fry it with Pixian bean paste, which will be more spicy.
