Ingredients:
1200 grams of pork trotters, 5 garlic kernels, 3 slices of ginger, 2 green onions, 1 star anise, 1300 grams of water, soy sauce 250㏄, salt, 1 tablespoon rock sugar.
Method:
Wash the pig's feet first, then blanch them in boiling water for about 10 minutes.
Take it out, rinse it with water and let it cool. After removing the hair, wash it and drain it.
Put it into a 160℃ oil pan and fry until it turns color, take it out, drain the oil and set aside.
Put garlic, ginger slices and green onion segments into the oil pan and fry briefly, then take them out and set aside.
Take a casserole, first put the ingredients of method 2 and star anise, then add the pig's feet prepared above.
Add all the seasonings and water, bring to a boil over high heat, then turn to low heat, cover the pot, and continue stewing for about 1 hour and 20 minutes.
