Material: 25g of beef and 5g of fresh mushrooms
Practice:
1. Wash the beef, cut it into thin slices, mix well with soy sauce, salt, wine and sugar, add starch, oil and a small amount of water for more than 3 minutes, and mix well. After the beef slices absorb water, add a little more, and repeat for 2 or 3 times to make the beef more tender and smooth;
2. Take a small pot and fill it with appropriate amount of water, ginger and salt, and boil it. Remove the mushroom feet, clean and slice it, and put it into the small pot to fly water for later use;
3. Put the oil in a hot pot, pop the ginger pieces, add the mushrooms that have already flown, stir-fry them thoroughly and put them away for later use;
4. Put the oil in a hot pan, with a little more oil. After the ginger slices and garlic slices are exploded, add the beef slices and fry them with strong fire until the edges of the meat slices change color, and there is no need to stir fry them.
5. Add mushroom slices and oyster sauce, then pour a little wine on the side of the pot, stir well and serve.
