Start to set the plate, add ginger and onion, put the fish on the pot and steam it. My fish is less than a catty, and it will take 8 minutes, and the big fish can take 10 minutes. Pour out the water for steaming fish and throw away the ginger slices.
Add shredded onion and green pepper (optional) and pour the fish in hot oil, steam the fish with soy sauce, and pour it in from the side of the plate. You can eat the fish with soy sauce (you can pour more, the bottom of the plate is covered, my soy sauce is gone, so order it at last).

Tips
1. Turn on the steam engine and steam the fish for 8 to 10 minutes.
2. Hold water, or don't hold it, you must rinse it clean, and the kitchen paper will absorb the water.
Water-holding: Put the fish in running water for 15 minutes, which will not only remove the fishy smell, but also make the steamed fish crystal clear and tender.
3. The water of steamed fish must be poured out, one is fishy and the other is turbid, which will take away the freshness of soy sauce.
4. According to chef Lin's plan, the fish stands up, but my picture is not obvious. On the one hand, it is beautiful, and it means good without turning over. On the other hand, it increases the circulation of hot air to ensure the taste.
