Feixi old hen soup is a traditional classic dish of Anhui cuisine. Named for its "Feixi" place name. Hefei, Anhui Province, formerly known as Luzhou, has jurisdiction over Feidong and Feixi counties. There is a local saying, "From Feidong to Feixi, I bought an old hen." According to legend, during the period of Emperor Gaozu Liu Bang, "Feixi old hen soup" was used as a tribute. Liu Mingchuan, the first governor of Taiwan Province Province, praised this delicious food in his hometown.
