1, cut the mussels into strips (slices about 0.5 centimeters thick), green onions cut into segments, ginger cut into small thin slices.
2. Heat the oil in a frying pan to about 80 degrees Celsius, then place the cut mussels into the pan at a medium temperature for 1 minute to cook, then remove and set aside.
3. Pour the oil back into the frying pan, use the remaining oil in the pan to sauté the scallions (3) and ginger (6), then add ___ oil (1 teaspoon), chicken broth, sugar and water to make a sauce.
4. Add the mussels into the pot and mix well, then add the cornstarch (mixed with 20cc of cold water) to thicken the sauce.
