1. Cut the duck rack into small pieces and remove the fat part.
2. Prepare Huang Feihong’s chili peppers and peppercorns.
3. Cut green onion into sections and slice ginger.
4. Pour a small amount of oil into the pot and stir-fry the peppercorns and chili until fragrant.
5. Add the roast duck rack and stir-fry.
6. Add onion and ginger and continue to stir-fry until the oil is released.
7. Pour off the excess fat, add soy sauce, sugar, and cooking wine and stir-fry evenly.
8. Add appropriate amount of boiling water. It's better to cover the duck pieces.
9. Bring to a boil over high heat, turn to medium heat, add salt, and cook for 20 minutes.
