1. Wash the pig's head meat and cut it into pieces, blanch it in a hot water pot, add ginger, pour cooking wine, skim the floating foam when the water boils, then wash it with clear water, put it in a pot, add shredded ginger, star anise, cinnamon, fragrant leaves and cooking wine, cover the pot and stew for 40 minutes, then take out the pig's bones, tear off the meat and cut it into pieces.
