1. Wash and cook the pork head, add two pieces of beaten old ginger to taste.
2. Remove and cool, cut into thin slices, take a small bowl.
3. Mix soy sauce, vinegar, minced ginger, minced garlic, minced fresh chili pepper, pepper powder, chopped green onion, chili oil, chicken essence and white sugar in a small bowl in proportion and mix well to form a seasoning. Just put it on the pork head.
