1. Break cowpea into 5cm sections and wash them with clear water.
2. Pour clean water into the pot. After the water is heated, pour cowpea into the pot, add about 3g of salt and a few drops of cooking oil and blanch for 1 minute.
3. Remove the scalded cowpea and put it in cold water.
4. Pour chopped pepper, light soy sauce, vinegar, a little salt and sesame oil into a bowl and mix well.
5. Put the cowpea into the dish and pour in the prepared sauce.
