High-quality sesame oil is reddish brown or dark brown, while inferior sesame oil is brown or dark brown; High-quality sesame oil has a strong fragrance unique to sesame oil, while inferior sesame oil has either a dull smell, a pungent atmosphere or even a burnt smell.
Thirdly, you can gently drop a drop of fragrant oil on the calm water with chopsticks. High-quality sesame oil will present a thin, colorless and transparent large oil flower, which will form a number of small oil drops after it is dispersed, and the oil flower formed by inferior sesame oil is small and thick, and it is not easy to spread.
Finally, there is an identification method without any equipment, which is very convenient and effective to use. This method is called rubbing method. We find out two kinds of sesame oil, dip a drop of fragrant oil in the index finger of the left and right hands, and then rub it with the thumb of the left and right hands respectively. Because of the heat generated by friction, the movement of aromatic molecules in the oil is intensified and the fragrance will spread. After rubbing for a minute, let's smell the sesame oil at the fingertips. If the sesame oil is not adulterated, it only has a strong fragrance; If it is mixed with other vegetable oils, besides the fragrance of sesame oil, it will also be mixed with the odor of adulterated oil; If it is blended with essence and pigment, because the essence is volatile, the smell will be blunt at first, and then there will be basically no sesame oil smell, while the taste of real sesame oil will last longer. After rubbing for half an hour, you can still ask the sesame oil smell at your fingertips. This method is simple and reliable, and is most suitable for on-site identification.
