Steps
1. Preparation: Wash the duck legs, drain the water; put the peppercorns and salt into the pot and stir-fry over low heat, stir-frying until fragrant and the salt turns from white to light coffee color.
2. Spread the fried pepper salt (including the peppercorns), cooking wine and ginger evenly over the front and back of the duck legs. Marinate the duck legs in the refrigerator for half a day or overnight.
3. Steam the duck legs in a pot over high heat for 20-30 minutes (depending on the size);
4. Wipe off the peppercorns and oil on the surface of the steamed duck legs, and fry the duck legs in a small amount of oil over low heat until the skin is golden brown and crispy.
Tips
1, in addition to pepper grains spiced deodorant, can also be put into the crushed star anise grains, five spice powder and other personal favorite seasoning;
2, you can use the whole duck, the whole chicken to do the same way, but the last step of frying need to be replaced by deep-fried, to ensure that the color is uniform.
