Solanum nigrum is a toxic glycoside alkaloid. Its melting point is 248℃, and it decomposes at about 280-285℃. Although cooking can not reach the decomposition temperature at ordinary times, Solanum nigrum can be dissolved in water and can be decomposed and destroyed after heating with acetic acid. Therefore, soaking potatoes in water before eating and adding appropriate amount of white vinegar when frying are more conducive to food safety.
It is worth noting that not only germinated potatoes are poisonous, but also blue potatoes are poisonous. When storing potatoes daily, try to keep them in a cool and dry place to avoid contact with water and reduce the possibility of potato germination.
