The method of air-drying fish is as follows:
1. Empty the internal organs of the fish, wash them, dry the water, cut off the fish head, and remove two large pieces of fish meat along the fish bones.
2. Sprinkle salt on both sides of the fish fillet, put it in the refrigerator for a day, pour out the salted water, then sprinkle a layer of salt and marinate for another day, pour out the water.
3. Put the peppercorns, cloves and star anise into the pot and stir-fry until fragrant. Use a food processor to grind into pickled powder, add salt and mix well.
4. Sprinkle pickled powder evenly on both sides of the marinated fish fillet, thread the fish fillet with a rope, hang it in a ventilated place until dry, and finally put it into a sealed container and store it.
