Raw materials: Pipi shrimp meat, eggs, leeks, peanut oil, cooking wine, oyster sauce and salt.
Practice steps:
Step 1: Rinse the fresh Penaeus pipiens and put it in the refrigerator for about 3 hours. Cut off the shell, cut the meat of Penaeus pipiens into large sections and put it in a container for later use.
Step 2: Select an appropriate amount of old leaves from Chinese chives, rinse the sediment with water repeatedly, and then soak for 30 minutes, so as to better remove pesticide residues. After controlling the moisture, cut into leek segments for later use.
Step 3, put the chopped leek into a container with shrimp meat, beat in three eggs, add appropriate amount of cooking wine, oyster sauce and salt, and stir well.
Step 4, add a little more peanut oil to the hot pot than cooking, pour in the stirred eggs and stir them gently with a spatula after a little liquid solidification.
Step 5, stir-fry until the ingredients are cooked, turn off the heat and take out the pot.
