Dietary culture of fish balls
According to Records of Historian Chen Benji, Qin Shihuang loved fish. He unified the whole country, and when he became emperor, every meal should have fish, but not thorns. If there are fishbones, the chef will die, and several chefs will die. And cooking fish soup is afraid of cursing Qin Shihuang for "breaking into pieces." One day, a chef cooked royal meals, and when he saw that the fish were timid and determined, he took a kitchen knife to hit the fish to vent his anger. Once or twice, he broke it. He was surprised to find that the fishbone came out automatically and the fish turned into minced fish. Just then, there was a meal in the palace, and the chef used his quick wits to pick out the fishbone. Without thinking, he kneaded the minced fish into meatballs and put them into the cooked leopard fetal soup, which became meatballs. In a short time, fish balls with white color, soft and crystal clear taste floated on the noodle soup and were presented to Qin Shihuang. Qin Shihuang tasted it, praised it greatly and ordered a reward. Later, this practice gradually spread from the court to the people, known as "fish balls", that is, fish balls.

The legend of Fuzhou Qixing fish ball

In ancient times, there was a fisherman by the Minjiang River in Fujian. One day, a businessman took his boat to the south to do business. The boat left the mouth of the Minjiang River and entered the sea. It was hit by a typhoon. When the ship entered the harbor to take shelter from the wind, it was unfortunately damaged on the rocks. The ship repair was delayed, the food was broken, and fish was eaten every day. The businessman sighed, "There are fish every day, and the food is tasteless. Can you change your taste? " "The ship's grain has been cut off, only a bag of potato powder," said the boatwoman. The ingenious boatwoman peeled and pricked a big eel that she had just caught, chopped the fish, coated it with potato powder, made meatballs, and tasted them after cooking. Afterwards, the businessman returned to Fuzhou and opened a "seven-star snack bar" in the city, which specially hired the boat lady as a chef and exclusively operated "fish ball soup". At first, business was not good. One day, a son who went to Beijing to take an exam passed by this store for dinner. The shopkeeper warmly entertained and held out fish balls. After eating the food, I found it delicious, so I wrote a poem:

Little stars are scattered all over the floor, and jade is sweet and fragrant.

Although southern Xinjiang has been drinking for thousands of years, it is rare for seven stars to taste poetry and spleen.

The shopkeeper hung the poem on the floor of the shop and all the guests came to watch it. Since then, business has become more and more prosperous and shops have become more and more popular. "Seven Star Fish Pills" also got its name.

The legend of Jinjiang Shenhu fish balls

Jinjiang Shenhu Fish Pill was very famous in the early Song and Yuan Dynasties, and it is said to be related to Quanzhou magistrate Wang.

It was a drought in Quanzhou, and hunger was everywhere. Wang went to the Fashi Temple outside the city to visit the farmers. He found Qin Xing, a relative of Qin Gui, celebrating the old lady's birthday in the temple, and fish were everywhere in the temple. When Qin Xing heard that the prefect had arrived, he went to the wing to ask the king to write an inscription for the prize, and offered twelve taels of silver as a pen. Wang knew that Qin Xing had no culture, and the official bought it off, so he suggested that after the poem was written, he must go back to the city shipping company to read it in public, and donated twelve pieces of silver to the Fashi Temple to pray for rain and burn incense. All the offerings in the main hall were left to the villagers around the temple to share. Qin Xing readily promised. Qin Xing gave the title: "Bai Qin Sheng Xing". Wang waved his hand on the spot: "The Qin family is full of fish, and the people are hungry for bran vegetables. If you are happy, you won't forget to benefit the public. If you are promoted, you are not a bad person. " Qin Xing didn't know what it meant, so he went back to the city with his family Ashan in high spirits.

Qin Xing took the poem to the trading company and read it out. He wanted to show off, but he was made a laughing stock. Qin Xing dare not offend these nouveau riche. He hates the king and gnashes his teeth. At the same time, he also drove his servant Ashan out of the Qin family.

By the time the wheat blooms and fills, it has been raining for several days in Quanzhou. Wang also went to Fashi Temple to visit farmers. On the way, Yashan stopped and shouted foul. Wang gave an idea for Yashan. At Qin Taijun's birthday party, Wang only ate a bowl of water pill soup, but he thought the water pill was too hard and not delicious. He is thinking about improving water pills. So, in Fashi Temple, Wang combined the practice of imperial catering in Beijing with water pills, and wrote down the methods of selecting materials, making, soup heads and stuffing for Ashan. Ashan got the treasure and moved his family to Shenzhen with Wang's prescription, making water pills and selling fish soup according to Wang's prescription.

The origin of Pengcheng fish balls

During the reign of Kangxi in Qing Dynasty, Li Zichao, the owner and disciple of Yuelai Restaurant, a famous brand-name old shop in Xuzhou, used a carp to cook four dishes: silver pearl fish, diced fish with vinegar, multi-flavor keel and fish-coat soup. Among them, "silver pearl fish" is the best. Li Pan, the champion of the Qing Dynasty, tasted this dish in this shop and once wrote poems and praised:

Carp loses its silver beads, but it tastes like a keel.

The sea floats in the prince's clothes, and the machete is sweet and sour.

Huadian drugstore was provided by Yaotai, and Mao Sui's legacy has been preserved for thousands of years.

When Kang Youwei crossed Xuzhou. Celebrity chef Zhai also cooked silver pearl fish as a dedication. After Kang tasted it, he wrote a slogan: "Pengcheng Fish Pill has heard your name for a long time, and its reputation has spread far and wide." Since then, Zhu Yinyu has changed its name to Pengcheng Fish Pill. According to The Root and History of Chaozhou Cuisine, Min and Lu Xiufu were caught by the local rebels when they arrived in Jiazi. The frightened King of Song was not the enemy at first sight, but the people of Da Song, who became emperor by the sidewalk. At that time, Fu Zheng, the rebel leader of the young fisherman, quickly asked his wife Guqiao to cook the local famous dish "Fish Pills" and warmly entertained the hungry Song King. He claimed that "Jiazi Fish Pill" had the power to save the driver, and immediately gave it to Fu Zheng, the jade unicorn he was wearing. He also issued a decree that Fu Zheng and his rebels were the "country" of today's emperor. Because "Jiazi Fish Pill" saved the driver, it was named the first famous dish by the emperor, adding the story of Chaozhou cuisine.

The fame of Jiazi Fish Maru can be traced back to the early 1960s. At that time, there was an article in Nanfang Daily, which introduced the Jiazi fish ball, which was popular in Hong Kong and Macao, saying that it "accidentally fell to the ground and bounced back to the table". After such an exaggerated description by the media, Jiazi Fish Maru has become more and more famous and popular. The reason why the excellent reputation of Jiazi fish balls can last for a long time lies in the unique appearance and internal quality of the fish balls themselves.

First, the appearance of Jiazi fish balls is white and clean, glittering and translucent.

Secondly, Jiazi fish balls are warm, soft and full.

Third, the production of Jiazi fish balls is rigorous, exquisite and meticulous. There is a set of very complete and classic procedures, from taking materials, scraping scales, removing thorns to chopping minced meat, from conditioning, beating and granulating to bleaching and washing. Such refined meatballs are crisp and fragrant, and it is difficult to be famous.

There are two poems on the Internet from Su Dongpo singing Lingnan litchi, saying that "300 fish balls a day, do not hesitate to be a Jiazi person", which shows the powerful charm of Jiazi fish balls. Actually, you don't need 300. No matter how greedy you are, a steaming bowl is enough!

Every year, thousands of tons of fish balls are sold from Jiazi Town, a big fishing port, to Guangdong, Hong Kong and Macao, Southeast Asia and other regions. Chaozhou people's elegant personality and exquisite craftsmanship finally achieved the peak of fish balls. Generally, authentic Jiazi fish balls can be eaten in major cities in Guangdong, especially in Hong Kong and Southeast Asia.
