Ingredients: pork belly, oil, salt, vegetables, pepper powder, spiced powder, cooking wine, soy sauce, star anise, aged vinegar, shallots, ginger and flour.
Step 1 Mix well, then pour in cooking wine and marinate for about half an hour to remove fishy smell.
Step 2 Pour dry flour into a large bowl and knock in an egg.
Step 3 add a little water and stir it into a thick batter. Clear water should be added several times, so that the batter can wrap the meat slices, and the viscosity of the batter is the best.
Step 4 Pour the oil into the wok. Heat the oil to 6℃, and put the meat slices wrapped in batter into the wok one by one.
Step 5: Fry until golden brown, then take out and control the oil for later use.
Step 6: Add chopped green onion, shredded ginger and star anise into another oil pan and stir-fry until fragrant. Pour in the crispy meat and stir fry. Then add the washed vegetables and simmer 10 minutes.
