Ingredients: butter 110g low-gluten flour 260g (I am used to using Meimei low-gluten flour myself, and the cookies made are very crisp, if I am used to using other brands) eggs1fine sugar100g.
Accessories: 2 grams of baking powder (if you don't have it, don't use it, the effect will definitely be better) 2 grams of salt.
Steps:
1. Cut the butter into small pieces and soften it at room temperature. If you are in a hurry, you can also heat the butter in the microwave oven. Soften the butter to the core. Never let it turn into liquid. Add fine sugar and salt to the softened butter, and beat it with an egg beater at low speed until fluffy. If there is no eggbeater, you can only use chopsticks, but that will be very tiring. Then add the egg mixture several times. Note that every time you add egg liquid, you must make it fluffy before adding egg liquid. Be sure to send it until you can't see the egg liquid.
2. After the butter and egg liquid are dispersed, sift in the flour. Again, it must be low-gluten flour. Usually, the steamed bread and steamed buns made at home are all medium-gluten flour, and the effect is not so crisp. Anyway, when you put flour, you can't put it in at once. You should put it in several times, then live it into a smooth dough, not too soft or too hard, and then wrap it in plastic wrap and put it in the refrigerator for an hour. When the time is up, take out the dough and roll it into 3 -5 mm thick slices;
3. On the rolled dough, press out the pattern with a mold. In order to make the biscuit easier to demould, you can now brush a layer of oil on the mold. If there is no mold, it can be cut into squares or triangles with a knife. The shape is arbitrary;
4. Preheat the oven to 180 degrees in advance, heat it up and down, and put the pressed dough in the middle layer for about ten minutes. Pay attention when baking. If you find that the biscuit turns yellow around, you can turn off the fire in advance and let it preheat before stewing. If I don't turn them off all the time, they may get burnt.
Don't worry about eating cookies when they are baked. It will be soft when it is just out of the pot, and it will become brittle when it is cooled. Manual code word is not easy, please adopt it!
