Prepare the ingredients: 500g of flour, 2g of lye, and 180m of water.
I. Put the flour and lye into a pasta pot, and mix well. Pour in the water slowly with one hand, and use chopsticks to stir the flour constantly with the other hand.
Two: Knead the flour into a smooth dough and let it rise for 30 minutes on a sheet of plastic wrap.
