Fresh squid and two (slightly larger) green peppers.
Appropriate amount of onions and dried peppers
A little ginger and a little garlic.
Proper salt soy sauce
Cooking wine oil
Sauté ed fresh squid
Step 1
Cut the squid, gut it, tear off the film, and then clean it.
Second step
Cut a cross pattern on the inside of squid with an oblique knife (as shown in the picture).
Third step
Slice the cut squid, as shown in the figure.
Fourth step
Cut green peppers into pieces, shallots into sections, sliced ginger and garlic, and cut dried peppers into short pieces for later use.
Step five
Boil the water, add two slices of ginger, blanch the squid, roll up the squid and pick it up for later use.
Step 6
Stir-fry ginger, garlic and dried Chili in an oil pan, then add green pepper and squid rolls, add salt, cooking wine and soy sauce, and stir fry in turn. Finally, add onion and stir fry.
