Deal with the chicken, try to get rid of the fat, and wash it with water several times. Put cold water in the pot and blanch it. After blanching, rinse the surface with hot water.
Wash mushrooms and soak them in hot water.
China oil, stir-fry ginger slices and shallots. Then pour the chicken pieces, add soy sauce and stir fry, add cooking wine, salt and sugar, and pour China hot water.
Put all the chicken pieces in the wok into the pressure cooker and add the water for soaking mushrooms. Cut off the roots of mushrooms and put them in a pressure cooker. Because of the relationship between chicken and firewood, stew for about 25 minutes.
After the pressure cooker is exhausted, add chestnuts and continue to stew for about 10 minutes, then collect the juice and take it out of the pot.
