Wash the fish, rub salt and cooking wine, marinate for 30 minutes, and then rinse with water (can be used to absorb the water with kitchen paper, the oil) and the oil will not splash out)

Prepare the green pepper, add, shred the green onion, prepare the ginger, garlic and millet pepper.

Pour a moderate amount of oil in the pan, boil until 70% mature, add the fish and fry for about 1 minute and then fish out.

Use the oil in the pan to stir-fry the green and red bell peppers, then fish out, then use the remaining oil to stir-fry the millet peppers, ginger, garlic, and scallion knots, stir-fry the fish, then add the seasoned sauce (seasoned sauce: add half a bowl of water, moderate amount of salt, chicken essence, soy sauce, light soy sauce, and sugar, etc), and cook until the head of the fish is cooked, then you can fish out.
The last step
Place the sautéed green peppers on top of the fish, add some shredded green onions, and drizzle with the boiled soup in the pot.
