Stewed tofu with fish head
Required ingredients: silver carp head (or silver carp), old tofu, ginger, green onion, garlic, chives, parsley, cooking oil, Pixian bean paste, soy sauce, oyster sauce, cooking wine, thirteen spices, pepper, pepper, salt and chicken essence.
The manufacturing method is as follows:
1. Prepare a fresh silver carp head and 1 piece of old tofu. (Old tofu, also called "North tofu" in some places)
2. First break the fish head in half, but don't cut it. Then add some ginger slices, green onions, a proper amount of pepper, and then pour in some cooking wine and salt. Spread the seasoning all over the fish head and marinate for about 20 minutes.
3. Prepare a non-stick pan, first pour a proper amount of cooking oil into the pan. When the oil temperature rises to 60% heat, put thick slices of tofu into the pot and fry until both sides are golden.
4. Clip out the fried tofu for later use. Then prepare a proper amount of ginger slices, green onion segments, garlic cloves, pepper granules and Pixian bean paste; After the shallots and parsley are cleaned, they are cut into appropriate long sections; Besides, cut some chopped green onion.
5. Bring the pot to a boil and pour the right amount of cooking oil into the pot. Add onion, ginger, garlic, pepper and Pixian bean paste first, and stir-fry until fragrant. Then add the fish head and fry until the two sides change color slightly.
6. Add a proper amount of water to the pot, subject to drowning the fish head. Then add some soy sauce, pepper, thirteen spices and oyster sauce. First, bring the soup to a boil over high heat, and then turn to low heat to stew the fish head for about 30 minutes.
7. When there is some soup left in the pot, pour in the fried tofu and burn it for about 5 minutes, so that the tofu can absorb the soup and be easy to taste.
8. Add shallots and celery and cook until it becomes discolored and soft.
9. First put the fish head into the plate, and then add some salt and chicken essence to the pot to taste.
10. Put the tofu and soup in the pot into the plate with the fish head, then sprinkle some chopped green onion, and you can start!
