2 eggs
Icing sugar powder 50g
Glutinous rice flour 75g
Black rice 25g
Supplementary Ingredients
Icing sugar powder 50g
Step 1
Firstly, polish the black rice into black rice flour by using a food processor. Sieve it so that the black rice flour can be a bit finer
Step 2
Mix the polished black rice flour with glutinous rice flour and set aside
Step 3
Crack 2 room-temperature eggs into a whisk bowl, and add 50g of powdered sugar into the bowl as well. Prepare a small half bowl of hot water, about 60℃
Step 4
Place the bowl inside the hot water bowl, and beat the whole eggs with an electric whisk under hot water until a toothpick inserted into the center of the batter and let go, and the batter can be kept for 2-3 seconds without falling down, then it proves that the batter is fully whipped
Step 5
Sift the black rice and glutinous rice mix into the batter in 2 batches. flour, tossing up and down to combine. Each time you sift in the flour, use a spatula to toss until no powder is visible
Step 6
Place the tossed batter into a 6-inch mold, or you can use a regular soup bowl instead. (You can grease the inside of the mold with a little bit of cooking oil for easy release!)
Step 7
Boil the water in the steamer first, then put the cake mold into the steamer, and steam on high heat for 20-25 minutes. After steaming, don't rush to uncover the lid first, first simmer for 5 minutes, then open the lid
Step 8
After 5 minutes, take it out of the pot, take off the mold, and cut it into pieces to serve
