Making steps of Korean cold noodles

1 Beef stew: Because the beef is not cooked very well, let's make beef first. This time I used beef tenderloin (try to choose lean meat), put it in a pot with cold water, add ginger slices, aniseed, pepper and cinnamon, and cook until it boils. Take out the beef and add water, spices (same as before), soy sauce, sugar and cooking wine into the electric pressure cooker. There should be more water than beef.

2 eggs: raw eggs are soaked in cold water 15 minutes, then boiled in cold water for 5 minutes.

3 Sauerkraut and spicy cabbage: When stewing beef, you can make spicy cabbage. Wash the leaves of Chinese cabbage layer by layer, peel them off, add salt layer by layer, spread them evenly, cover them with plastic wrap and put them in the refrigerator (Figure 3). When the Chinese cabbage comes out, it will be taken out and cut into sections about 1 hour.

4 Making Chili sauce: Here is a good suggestion for making Chili sauce. First cut the beef into diced beef, add a little oil to the pot, stir-fry the diced beef until fragrant, add Chili powder, then add 1 tablespoon Sprite (by weight), mix well, sprinkle some white sesame seeds, and the delicious Chili sauce is finished. It's simple.

5 spicy cabbage is ready: after the water comes out, add sugar, a little salt, our Chili sauce and white vinegar to the spicy cabbage, rub the fragrance into the cabbage and marinate for half an hour. Crispy sweet and sour homemade simple cabbage ok.

6 cold noodle soup = beef soup+garlic Jiang Shui+pear juice > beef soup: after the cooked beef soup is cooled, remove the oil slick for later use.

7 Garlic Jiang Shui: Slice garlic and ginger and add salt to make it easier to get out of the water. Add cold boiled water/mineral water into a clean bowl, wrap garlic Jiang Mo with gauze, soak in water, repeat, squeeze out juice, and add a little white vinegar.

8 pear juice: pears are beaten into juice.

9 Mix beef soup and garlic Jiang Shui at a ratio of 6 (the original formula is 3 to 7, which I think is a bit heavy), then add pear juice, and add salt and sugar according to personal taste.

10 noodle: I use this noodle to cook in hot water for 3 minutes, and then rinse it off. Noodles should be cooked last, or they won't taste good.

1 1 1 whole package: put noodles in a bowl, add cold noodle soup, slice apples, pears, beef, coriander, spicy cabbage, shredded cucumber and boiled eggs, sprinkle a little Chili sauce in the middle and sprinkle sesame seeds. If there is ice at home, you can sprinkle cold ice chips to keep it cold.
