Before describing the method of drying yellow cauliflower, it is important to mention the picking of yellow cauliflower, because only timely picked yellow cauliflower can guarantee the quality of the dried product. Yellow cauliflower buds should be picked before they are fully ripe but not yet open. The time is usually between 11 am and 5 pm. If it is a rainy day, the buds will open earlier and can be picked earlier. The picked buds should be soaked in boiling water for a few minutes until the buds lighten in color, then removed and allowed to cool naturally. Finally they can be dried.
Specific methods of drying
1. Sun drying.
First of all, the first step is to build a rack for drying yellow cauliflower, the height of the rack is about 30cm to 60cm. Then, lay a chair or a drying tray on the shelf, and then you can put the buds of the treated yellow cauliflower on it. It must be spread out and placed evenly, about two or three meters thick, and turned every two or three hours. In the evening you have to put the yellow cauliflower away and cover it with a cloth to prevent the dried cauliflower from getting damp again. Generally to dry until the yellow cauliflower pinched tightly, loosened and then naturally stretched, the buds do not stick together. In case of persistent cloudy days, available five thousandths of sulfur steam, to prevent yellow cauliflower mold and rot.
2. Drying.
Generally each square baking dish can be placed on about five kilograms of treated cauliflower. In the pre-drying stage, the water content of the cauliflower is still relatively high, so before putting the cauliflower, you can set the temperature of the drying room to 80 to 85. After that, you can reduce the temperature to 60-65 degrees Celsius, bake for 12-15 hours, and then slowly reduced to 50 degrees Celsius, until the cauliflower is completely dry. To prevent the yellow cauliflower from being scorched, change the baking tray in time and turn it regularly to ensure consistent drying of the dried yellow cauliflower.
