Home-style recipes for wild mushrooms, pine mushrooms and diced pork rice
Ingredients: 300g rice, 100g diced pork, 150g pine mushrooms, 50g green pepper, 30g red pepper, appropriate amount of oil, salt, ginger, green onion, soy sauce, oyster sauce and chicken stock.
Method:
1. Soak the pine mushrooms, clean and slice them, dice the meat, dice the green and red peppers, and mince the green onions and ginger;
2. Add oil to the pot, stir-fry the onions and ginger until fragrant, and add the diced meat;
3. When the color of the diced meat turns white, add the pine mushrooms;
4. Add light soy sauce, oyster sauce, and salt and stir-fry;
5. Add a little water and cook until cooked;
6. Add green and red peppers, stir-fry evenly, sprinkle with chicken essence and serve;
7. Place the fried pine mushroom diced meat on the rice.
Chicken vermicelli stewed with pine mushrooms
Ingredients: half a chicken, 100g pine mushrooms, 1 small handfuls of vermicelli, appropriate amount of oil and salt, 1 green onions, 4 slices of ginger, 2 star anise, appropriate amount of light and dark peppercorn cooking wine, 1 small pieces of cinnamon bark, 5 bay leaves, a little sugar
Method:
1. Soak the vermicelli in advance, cut the chicken into pieces, soak the pine mushrooms and wash them thoroughly;
2. Pour water into the pot, blanch the chicken pieces for 2 minutes, take them out, wash them with warm water, drain them and set aside;
3. Put a little oil in the pot. When the oil is hot, add the chicken pieces and stir-fry;
4. When the chicken pieces become firm and the oil seeps out, add onions, ginger, star anise, peppercorns, cinnamon and bay leaves and stir-fry until fragrant;
5. Add light soy sauce, dark soy sauce, sugar and cooking wine and stir-fry;
6. Add pine mushrooms and stir-fry;
7. Add appropriate amount of water and bring to a simmer over high heat, then turn to medium to low heat and simmer for 30 minutes, add salt to taste;
8. Put the soaked vermicelli into the pot, stir a few times, turn to high heat and continue cooking for 5 minutes;
9. Finally, sprinkle with chopped green onion.
Pine Mushroom Bacon Noodles
Ingredients: 100g of pine mushrooms, 100g of bacon, appropriate amount of oil and salt, 300g of wheat flour, 2 tsp of dark soy sauce, appropriate amount of garlic, green onion and pepper powder, half a tsp of sesame oil, appropriate amount of pepper, and a small amount of cabbage.
Method:
1. Soak the pine mushrooms in advance and then cut into small cubes;
2. Cut cabbage into shreds and bacon into strips;
3. Pour an appropriate amount of oil into the pot and heat it up, add onions, garlic and peppercorns and saute until fragrant, then add bacon and saute until fragrant;
4. Add dark soy sauce and appropriate amount of salt, then add pine mushrooms and cabbage and stir-fry;
5. Pour in appropriate amount of boiling water and cook for 5 minutes;
6. Add appropriate amount of sesame oil and pepper, stir evenly and serve;
7. Take out the hand-rolled noodles (you can use other noodles instead) and cook the noodles, pour the prepared marinade, and then pour the fried pine mushrooms and cabbage into the bowl.
