Du Kang was the legendary founder of winemaking in ancient China, and the Han Dynasty's Shuo Wen Jie Zi (说文解字)recorded the following: "Dukang began to make broomcorn millet wine. Also known as Shaokang, the king of the Xia Dynasty." Because Du Kang is good at brewing wine, later generations honored Du Kang as the god of wine, and the wine industry worshiped Du Kang as the grandmaster. In later times, the word "Dukang" was often used to refer to wine. Dukang's son, Heita, invented vinegar.
China is one of the countries in the world with a long history of brewing wine, as early as the Yin and Shang Dynasties, there were already wine pictograms in the oracle bone inscriptions, and by the Zhou Dynasty, China's brewing technology had developed to a considerable level.
The process of brewing wine was recorded in the Zaji and the Zhou Rites, and the Yellow Emperor's Internal Canon - Suwen, which was written in the Han Dynasty, recounted the discussion of brewing wine between the Yellow Emperor and Qibo, and the Wine Scripture, which was passed down during the Tang Dynasty, said, "Wang Jie traced the Jiao Ge wine method as the scripture, and also picked up the spectrum of those who have been good at making wine since Dukang and Yidi."
According to the 1991 Yucheng County Record, "Yucheng has been a famous wine town since ancient times where 'bad workshops are connected, and the smell of incense dismounts the horse'." "Yucheng County has a long history of brewing, as far back as 4,000 years ago, Du Kang, the originator of brewing, invented broomcorn millet wine here."
Baijiu, as one of the world's famous six distilled spirits, has spread its fame far and wide around the world. But unfortunately the brewing method of Dukang wine was lost with the development of history. Dukang wine has been restored and flourished thanks to the new China's brewing technicians.
